Chinese New Year is all about abundance, prosperity and joy—and in the Year of the Horse, the lo hei tradition is getting a beautifully theatrical update. This season, restaurants are tipping their hats to the zodiac with yu sheng platters shaped into horse-inspired designs, from delicate “manes” and horse heads built from finely sliced vegetables to grand centrepieces arranged for communal tossing.

The takeaway lineup stars the Cassia Fortune Yu Sheng ($388+), a lavish platter of lobster, abalone, bird’s nest and Norwegian salmon on fresh vegetables, plus a slimmer Prosperity Yu Sheng ($88+) for smaller gatherings, with Norwegian salmon prepared in a classic style.

Chef Fei’s Prosperity Toss riffs on Chaoshan-style yu sheng—julienned vegetables, crispy taro, Wujiang salted vegetables and radish, finished with a tangy house-made Chaoshan sour plum sauce (with hints of lemon and chilli), plus peanuts and pumpkin seeds for crunch. Go all-out with Lobster Yu Sheng (a la carte from $1,388++ per portion), starring live Australian lobster, with symbolic add-ons like geoduck clam (good fortune) or Atlantic salmon (prosperity). The ritualistic good-lucks words are read differently here, but still, with just as much pomp and enthusiasm!

A showpiece yu sheng that arrives with a hand-painted galloping horse by Master Chef Chan Hwan Kee, plus a horseshoe-shaped presentation (for dine-in), the Majestic Prosperous Horse ‘Lo Hei’ nods to strength and good fortune. The platter is ringed with crisp greens and veg (arugula, romaine, red carrot, baby radish), then dialled up with baby abalone, tobiko, kombu seasoning, pine nuts and golden fried yam strips. The Prosperity Exotic Garden Yu Sheng ($188) mixes lobster, sea cucumber and matsutake mushrooms with black truffle sauce, osmanthus sauce and white truffle oil, plus bright pops of pineapple and strawberry, and crunch from pistachios, soybean crisps and five-grain crispy rice—available for dine-in and takeaway.
