Perched on the rooftop of Marina Bay Sands, LAVO is an oasis of classic Italian coastal dining amid the bustle of Singapore’s hypermodern skyline. First arriving on our sunny shores in 2018, the restaurant and bar was also the first Singaporean venture of Tao Group, home to iconic nightlife venues Marquee and Avenue, led by businessmen and longtime friends Jason Strauss and Noah Tepperberg. In major cities across the globe, the group is also known for celebrity hotspots like Omnia and Electric Room.

After a four-month hiatus earlier this year, LAVO is back with a brand-new look, its promise of an eternal Sicilian summer renewed through rustic brick interiors, sunny wraparound views and a refreshed coastal-inspired menu. By night, the space transforms to an elevated bar and lounge, offering exquisitely crafted cocktails against the panoramic cityscape.

Following the return of LAVO, ELLE Singapore spoke to Tao Group co-CEO Jason Strauss about the new space, creating world-class hospitality and how the group is evolving with nightlife culture.

Congratulations on the re-opening of LAVO Singapore! Tell us about the refurbished space and what you want patrons to know about it.

"LAVO has always been about bringing vibrant energy to the top of Marina Bay Sands, and this refresh takes it to another level. We’ve reimagined the space with a Coastal Italian look inspired by the Amalfi Coast, light, airy and sophisticated paired with sweeping skyline views.

Our culinary team, led by Ralph Scamardella, has created a seafood-forward menu with dishes like Jumbo Shrimp Alla Scampi, Mafaldine Seafood Alfredo and Grilled Branzino, alongside new pizzas, steaks and lighter coastal-inspired plates. Of course, classics like our iconic Meatball and 20-layer chocolate cake are still here. It’s a completely evolved LAVO, fresh, transportive and made for celebrating."

"LAVO is more than just a restaurant, it’s a full-sensory experience. It blends incredible food, great music, and a lively atmosphere in one space. It’s not just about dinner; it’s about creating memories."

What sets LAVO Singapore apart from its North American counterparts?

"It’s truly the location. There’s nothing like dining with Marina Bay Sands’ panoramic skyline views as your backdrop."

LAVO was Tao Group’s first venture in Singapore in 2018. Why was it the right brand to lead your expansion here?

"LAVO felt like the perfect first step because it captures everything Tao Group is known for, high-energy design, elevated dining and world-class hospitality. We knew Singapore was ready for that kind of experience, and the response proved it."

What drew you to Singapore, and what keeps you expanding here?

"Singapore is cosmopolitan, global and trendsetting, with an audience that truly values quality. It’s been the ideal place to introduce new concepts, and the energy here keeps inspiring us to push boundaries."

How do you maintain a sense of exclusivity while catering to a wider nightlife community?

"Exclusivity, for us, is about making every guest feel part of something special. We create spaces that feel elevated yet welcoming, luxurious but never intimidating."

What makes Tao Group’s venues so welcoming to high-profile guests?

"We treat everyone like a VIP. We focus on discretion, seamless service and anticipating needs. That creates trust and comfort, which is why high-profile guests return.

The biggest challenge is balancing privacy with flawless service. We’ve had nights where a small table suddenly became a party of twenty with surprise performances and our team quietly makes it all feel effortless."

How has Singapore’s nightlife scene evolved since Tao Group arrived?

"Singapore’s nightlife has become far more global. There’s a stronger pipeline of world-class DJs and talent now, and a higher standard of design and production value across the board, which has been exciting to be part of."

Some say club culture is dying. What’s your take?

I"t’s not dying but it’s always evolving. Guests want more immersive, social and curated experiences, and we’ve leaned into that by creating multi-sensory environments that combine dining, design, music and community."

What are your plans for LAVO and Tao Group in Singapore over the next few years?

"We’ll keep evolving what we’ve built, from refreshing menus and programming at LAVO to exploring new concepts and experiences across our portfolio. Singapore has been an incredible home for us, and we see huge potential to grow with the city."
